Thousand Flowers Honey

Colour: amber – dark amber.
Aroma: floral, with a clear and marked woody component, like dry wood. Thousand flowers honey comes from several simultaneous blooms and has a highly variable color and flavor.
Taste: sweet with salty notes and, frequently, with bitter and acid notes depending on the area.
Touch: low crystallization tendency, except if accompanied by important fabaceae (legumes).


Lavender Honey

Color: very light amber.
Scent: floral.
Taste: Subtle sweet, with acid notes and a delicious and unusual floral aftertaste.
Touch: medium crystallization.
Production area: Castilla la Mancha, Aragón, Catalonia and Community Valencian

Forest Honey

Colour: amber – dark amber.
Aroma: floral, with a clear malt component (toasted cereal), intense and moderately persistent.
Taste: Sweet, with clear salty notes. In the retronasal, the intensity and persistence of the malt increases.
Touch: non-existent or very slow crystallization.
Production area: The entire peninsula except the coastal strip; mainly in the mountainous massifs.

Rosemary Honey

Color: light yellow.
Aroma: pintense cocoa, medium persistence, floral with camphor tones
Taste: sweet, generally without more, to sometimes with slight acid notes. Nasal aromas increase.
Touch: cfine crystallization if it is rich in almond, and thick if it is rich in dandelions.
Production area: Andalusia and Extremadura.
Harvesting: late winter and early spring.


Honey of Calluna

Color: light amber to dark amber.
Aroma: intense and very persistent, reminiscent of fallen leaves on the ground in autumn.
Taste: Sweet, with clear bitter and salty notes. Gelatinous sensation in the mouth, due to its high viscosity.
Touch: crystallization with separation of textures: crystals appear in the middle of the gelatinous mass.
Production area: Montane floor of massifs in the center and north of the peninsula.
